Oats and Honey Granola – Easy!

I don’t know about you, but I LOVE crunchy food. And I also love being creative with my shakes! This granola is perfect for an easy, quick, and delicious crunch on top of your breakfast or snack.

Dry Ingredients:

  • 3 cups rolled oats
  • 1 cup raw almonds, chopped

Wet Ingredients:

  • 1/2 cup raw honey or maple syrup
  • 2 teaspoons melted coconut oil
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla extract

Instructions:

Preheat oven to 350 degrees.

Mix dry ingredients and spread in a flat cookie sheet (with raised edges) and toast them in the preheated oven for 10-15 minutes, stirring occasionally.

While the oats are toasting, combine the wet ingredients.

After the oats are toasted (they should be very aromatic), pour the oats in into the honey mixture in a large mixing bowl. Stir well until combined.

On a baking sheet lined with wax paper (or greased well), form a single layer of the oat mixture.

Place the baking sheet back in the oven and turn the oven OFF. This will allow the granola to finish toasting without burning. Let it sit in the oven for 5-8 minutes. Remove from oven and let cool completely.

Be mindful, when the granola comes out of the oven, it will still be soft and sticky. As it cools, it will harden and become crunchy.

Top the granola on your yogurt, shake, smoothie, or snack and enjoy!
